Gluten Free Banana Hemp Protein Pancakes

I am notorious for some pretty adventurous food pairings. Maybe for may love and appreciation of fine dining. You read the menu and there are all of these crazy things listed in one dish that you wold never think to go together but they Tate fantastic. Banana, hemp and flax came to mind. I originally thought I was going to make a low carb, high fiber banana bread but thought I would experiment with something easier first. Just incase it was terrible I didn’t waste all a lot of ingredients and time.

The Results: High fiber, more macro nutrient balanced and delicious pancake that only took a few minutes. Quick enough for a weekday breakfast and definitely a minimal effort addition to your weekend breakfast routine.

Hemp protein powder is high in fiber to keep you full and keep your digestion system working well. And a happy digestive system will positively impact your energy and weight management.

It is also a little earthy, but the sweetness of banana and coconut flour balanced things out without any added sugar.!

Ingredients

- 2 tbsp hemp protein powder 

- 2 tbsp coconut flour 

- 1tbsp shredded unsweetened coconut

- 1 med/ large ripe banana 🍌 

- 1 egg

- 1/4 tsp baking powder

- 1 cap full vanilla extract (1/2 tsp ish) 

 - tsp coconut oil (for the pan)

Instructions

1: Put the teaspoon of coconut oil into a pan on medium low until melted

2: In a bowl smash up your banana with a fork, mix in the egg and then the rest of the ingredients. 

3: Use the batter to make two even pancakes in your pan. Flip before they look like they need it and just be patient. Because there’s no flour they won’t bubble but they will look fluffy when they’re done. 

4: Option to top with a tiny bit of local honey.
